| • 緩沖乳酸是一種具有緩沖作用的PH 調(diào)節(jié)劑。 • 具有抑制細(xì)菌的效果，與單獨(dú)使用有機(jī)酸相比，在PH 調(diào)節(jié)領(lǐng)域可起到更佳效果，能有效地加強(qiáng)防止氧化，延長(zhǎng)保存期等作用。• 緩沖乳酸也可作為酸味料使用，具有乳酸特有的溫和的酸味。與單獨(dú)使用有機(jī)酸相比，在PH 調(diào)節(jié)領(lǐng)域可起到更佳效果，能有效地加強(qiáng)防止氧化，延長(zhǎng)保存期等作用。 • 在面制品類，可提高產(chǎn)品的彈性、粘度、表面光滑度，使內(nèi)部顏色、口味俱佳。 • 對(duì)面粉中的蛋白質(zhì)起作用，可以使面筋形成豐富的網(wǎng)眼構(gòu)造。 • 可增加面粉的粘性與柔軟性，可增大體積、提高紋理勻稱，內(nèi)部顏色漂亮，尤其能使口味更佳。 • 由于提高了面粉淀粉的凝膠強(qiáng)度，因此可以均勻地將面條煮成形，而不會(huì)煮散。 • 糖果專用乳酸在硬糖生產(chǎn)中用作酸化劑，同時(shí)可以阻止糖的轉(zhuǎn)換，避免由此產(chǎn)生的糖果變粘或透明度下降。還可用于酒、口香糖和凝膠劑生產(chǎn)中，可用于降低酸味劑的副影響，將糖轉(zhuǎn)化、白明膠的降解減少到最低。 Buffered lactic acid is PH regulator with buffering effect.
